And not just because its easy, delicious, and perfect for any occasion, but because it is incredibly versatile! Here are a few simple ideas for using our Sugar Cookie recipe for everything from sandwich cookies to gingerbread!

Snowballs: Instead of chilling and rolling the dough, scoop the dough into tablespoon rounds and bake for 8-10 minutes. While still warm brush with melted butter and toss in powdered sugar.

Jam Filled: Just cut the sugar cookie dough into rounds (a smaller round cut from the top is simply for decoration) and fill with your favorite jam. The jam will soften the cookies slightly and make them taste like an entirely different cookie!

Gingerbread: Add ¼ cup molasses, 2 teaspoons ground ginger, 1 teaspoon cinnamon, and ½ teaspoon ground nutmeg just after mixing (or you can mix these ingredients into soften sugar cookie dough) and treat as you would the sugar cookie dough, chill, roll, chill, cut, chill, bake!

Ginger Cookie Sandwiches: A simple filling for gingerbread cookies cut into rounds – 4 ounces of softened cream cheese mixed with 2 cups powdered sugar and a pinch of salt.

Chocolate + Candy Cane Coins: Make chocolate (!!!) sugar cookies by adding 4 ounces of melted unsweetened chocolate and an egg yolk to the softened dough (again, this can be done at the end of mixing or softened dough after its been frozen or otherwise chilled). For a festive cookie, add crushed candy canes, roll into a log, chill the dough and then slice into ¼ inch coins. Bake for 8 to 10 minutes.
